BBQ Pork Ramen Recipe

Southern-twist on a ramen bowl with char siu-style barbecued pork in a rich broth with noodles, bamboo shoots, and a spicy pickled egg, topped with sesame seeds, scallions and sliced collard greens.

Spicy Pickled Egg

YIELD: 12 EA.

1 cupSoy Sauce
1 cupRice Wine Vinegar
1/4 cupSambal Oelek 
Directions

Step 1: In a medium saucepan, bring the prepared ramen broth to a gentle simmer.

Step 2: Cook the frozen ramen noodles according to package instructions; drain and place the cooked noodles in a 32 oz. serving bowl.

Step 3: Pour broth over noodles.

Step 4: Arrange char siu sliced pork on top of noodles.

Step 5: Add the pickled egg half, collard greens, scallions and bamboo shoots around the pork.

Step 6: Garnish with sesame seed and serve hot.

Sub-Recipe Directions

Char Siu Sliced Pork

Step 1: Prepare marinade according to manufacturer's instructions.

Step 2: Use butcher's twine to truss the pork shoulder up into a more uniform bundle of meat for even cooking.

Step 3: Marinate pork butt in a hotel pan under refrigeration for 24-36 hours, rotating after the first 12 hours.

Step 4: Preheat oven to 300°F.

Step 5: Drain marinade from pork, reserving for later use.

Step 6: Place pork butt on a sheet tray with a rack and roast for 5-6 hours or until internal temperature reaches 175-185°F. Baste with reserved marinade while cooking.

Step 7: Allow pork butt to rest 30 minutes before removing twine and slicing.

Step 8: Use immediately.

Spicy Pickled Egg

Step 1: Bring a medium size pot of water to a simmer/low boil. Swirl water and gently drop eggs in. 

Step 2: Simmer eggs for 7 minutes, then immediately cool in ice water.

Step 3: In a bowl whisk together the soy sauce, vinegar, and sambal.

Step 4: Peel eggs and place them in a shallow container. Pour marinade over eggs and allow them to sit overnight. Slice in half before using in ramen bowl.
