Italian Bruschetta Grilled Chicken Salad

Customers will enjoy the fresh and savory flavors of this crisp green salad topped with grilled chicken, fresh mozzarella, and bruschetta chopped tomatoes seasoned with basil and balsamic vinaigrette, served with panini toasted flatbread seasoned with Parmesan cheese.

Ingredient Quantity Method

Fajita Flavored Chicken Strips, Fully Cooked (#2497-398)

2 lbs 
Cover tightly and slack in cooler between 32° and 36°F prior to use.

Bruschetta Tomatoes  
Bruschetta chopped tomato blend commercially prepared refrigerated 1-3/4  
Balsamic vinaigrette commercially prepared 1 cup 
Red onion fresh minced 1 oz 
Combine in bowl and toss to blend. Cover and chill to hold.
Romaine lettuce blend fresh 2-1/4 lbs 
Fresh mozzarella cheese slices One-Fourth oz 18 oz 
Kalamata olives pitted drained 48  
To assemble single serving: Portion 3 ounces lettuce blend in salad container; top with 4 slices mozzarella cheese, 2½ ounces chicken and 4 olives. Top salad evenly with ½ cup bruschetta tomatoes.
Butter flavored oil as needed 
Brush 1 flatbread lightly with oil; heat on preheated panini grill set on 7 (medium-high heat) for 1 to ½ minutes, or until golden and crisp. Slice in quarters and arrange around outer edge of salad.
Balsamic vinaigrette commercially prepared 3 cups 
Serve with ¼ cup dressing portioned in PC cup.
