Chicken Breakfast Biscuit

A warm Tyson® Homestyle Chicken Pattie served on a flaky buttermilk biscuit drizzled with sweet honey butter sauce.
Ingredient Quantity Method
Biscuits frozen 50 each 
50 each 
Honey Butter commercially prepared 25 oz 
Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Place baking paper on sheet pans.

Place chicken patties onto sheet pans in a single layer. Do not overlap patties on each pan as too many will prevent even cooking.

Hold under refrigeration until cooking.

Place biscuits into a preheated 325°F convection oven, 350°F standard oven, and bake until golden brown, approximately 18-24 minutes. Record temperature on temperature log sheet.
Place chicken patties into a preheated 350°F convection oven, 375°F standard oven, and heat patties to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet.

Cut each biscuit in half horizontally and return to the sheet pan. Keep sliced biscuits on the sheet pans and place into the warmer uncovered.

Place chicken patties into a 4"" hotel pan lined with baking paper.
Cover with plastic wrap, leaving 1 corner open to allow moisture to escape.

Hold in warmer- keep biscuits and chicken patties at a minimum internal food temperature of 140°F.
To build the Chicken Breakfast Biscuit spread 1/4 ounce of honey butter on both the top and bottom of the biscuit. Place 1 breakfast chicken patty on the bottom half of the biscuit and then place the biscuit top atop the chicken patty.

Place each Chicken Breakfast Biscuit onto a sheet plan lined with baking paper and place into the warmer uncovered.

Hold in warmer- keep Chicken Breakfast Biscuits at a minimum internal food temperature of 140°F.

Record temperature of product on temperature log sheet.

Serve Chicken Breakfast Biscuit with a gloved hand or tongs. One Chicken Breakfast Biscuit per serving.
