Convection Oven 1. Choose a pot that can be covered, preferably a Dutch oven. 2. Placd roast in cooking pan, and add in cook stock to cover at least half of the roast. NOTE: To improve the flavor, the roast could be seared on a flat top grill prior to being in the oven. 3. Set the oven to 325°F and cook for 4-8 hours (the longer cook will achieve the greater tenderness). NOTE: For Conventional oven, set at 375°F.
