From thawed state, heat links over medium heat for up to 10 minutes and then reduce temperature to low. Cook to internal temperature of 165ºF. Internal temperature of 165ºF must be maintained.
Place 5 lbs. smoked sausage in half steam pan. Place in steamer and steam for 3 minutes.
Cover and hold in warmer up to 1 hour. Cook to internal temperature of 165 ºF. Internal
temperature of 165ºF must be maintained.
