Hearty chunks of smoked sausage, tender redskin potatoes, caramelized onions and crispy bacon
Cut sausage into 1/2" chunks and roast them until golden brown.
In a small sauté pan over medium heat, add reserved bacon fat and onions. Cook while stirring until onions caramelize.
Add chunks of roasted Smoked Sausage and chopped bacon. Mix thoroughly over heat. Deglaze pan with apple cider vinegar and add cooked potatoes, then toss gently to mix.
Add to serving dish and garnish with fresh green onions.
