WG Corn Tortilla Chips -10 oz.

Carrot, shredded or matchstick -2 ½ cup

Shredded cabbage -2 ½ cup

Tomato diced -2 ½ cup

Low Sodium Teriyaki Sour Cream Sauce (can sub with gochujang) -10 oz.

White cheese sauce -10 oz.

Directions

  1. Pre-heat oven to 350°F. Place frozen beef crumble in hotel pan, cover with foil and bake for 15-18 minutes. Hold at 145° or uncover and cool for cold packaging.
  2. Place 1 oz of corn tortilla chips (approx. 15) in a parchment lined box. For 2oz grain serving provide 30 corn tortilla chips.
  3. With a #10 scoop, top the corn chips with crumbled beef. With an 8 oz spoodle, place carrot, shredded cabbage and tomato. 
  4. With a ladle, top the nacho with a 1 oz drizzle of teriyaki sour cream and 1 oz of white cheese sauce.

Teriyaki Sour Cream

  1. Add ingredients in a mixing bowl and fold until smoothly blended.
  2. Chill for an hour or hold up to 5 days in refrigeration.
