Wokin Teriyaki Chicken

Moist and tender wok-style chicken strips tossed in classic teriyaki sauce and layered over a bed of brown rice and lots of crips steamed veggies.

Ingredient Quantity Method

Dark Meat Strips with Teriyaki Sauce, Fully Cooked (#17963-328)

137-1/2 oz 
Teriyaki sauce provided in case with protein 112-1/2 oz 
Brown rice cooked 200 oz 
Asian-style frozen vegetable blend commercially prepared 300 oz 

1. Sanitize work area with bleach & water solution.

2. Wash hands.

3. Put on food service gloves.

4. Place baking paper on sheet pans.

5. Place frozen chicken strips onto sheet pans in a single layer.  Cover the sheet pans with aluminum foil.

6. Place the chicken strips into a preheated 350°F convection oven, or a 375°F standard oven. Heat strips to a minimum internal temperature of 145°F, approximately 12-14 minutes.

7. Record temperature on temperature log sheet.

8. Heat the teriyaki sauce packets in boiling water until the sauce reaches a minimum internal temperature of 145°F.

9. Combine the heated chicken strips with the heated teriyaki sauce in a mixing bowl to coat the chicken. Transfer to an appropriate storage container, cover and hold warm until ready to use.

10. Cook the brown rice according to the manufacturer's instructions.  Transfer to an appropriate storage container, cover and hold warm until ready to use.

11. Cook the frozen vegetable blend according to the manufacturer's instructions. Transfer to an appropriate storage container, cover and hold warm until ready to use.

12. *Hold in warmer-keep the teriyaki chicken strips, brown rice and vegetable blend at a minimum internal food temperature of 140°F.

13. To build the Wokin' Teriyaki Chicken arrange 4-ounces of brown rice in the bottom of a bowl/serving dish.  Top the rice with 6-ounces of vegetables, and finally top the vegetables with 5-ounces of teriyaki chicken strips.

14. *Hold in warmer-keep the Wokin' Teriyaki Chicken at a minimum internal food temperature of 140°F.

15. *Record temperature of product on temperature log sheet.

16. Serve Wokin' Teriyaki Chicken with a gloved hand.  One Wokin' Teriyaki Chicken per serving.
