Tuscan Split Rail Chicken Sandwich

Grab a rail or two of tender Tyson All Natural* Chicken Chunks layered on freshly baked Split Rail Bonici Sheeted Pizza Dough with tangy marinara and lots of melted Parmesan and Mozzarella cheese.

Ingredient Quantity Method

All Natural White Meat Chicken Chunks, Breaded, White Meat, Fully Cooked (#15489-328)

100 each 
minimally processed no artificial ingredients  

Bonici® 12" x 16" Sheeted Dough (#25360-269)

100 strips 
Marinara Sauce commercially prepared 25 oz 
Mozzarella Cheese part skim shredded 25 oz 
Parmesan cheese shredded 5 oz 
Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Place baking paper on sheet pans.

Place Chicken Nuggets in a single layer on each sheet pan.

Place the 5""x2"" pizza strips onto sheet pans being sure that they are spaced 1/2"" apart from each other

Spread 1/2-ounce of marinara sauce on each pizza strip, then top each strip with 1/2-ounce of mozzarella cheese and 0.10-ounces of parmesan cheese.

Hold under refigeration until cooking.

Place Chicken Nuggets into a preheated 350° convection, 375°F standard oven and heat nuggets to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.

Place pizza strips into a preheated 350°F convection, 375°F standard oven and bake until golden brown and to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet.
Keep Chicken Nuggets on sheet pans and place into the warmer uncovered.

Keep pizza strips on sheet pans and place into the warmer uncovered.

Hold in warmer- keep Chicken Nuggets and pizza strips at a minimum internal food temperature of 140°F.
To build Tuscan Split Rail Sandwich place two Chicken Nuggets on every other cooked pizza strip, then top each pizza strip with Chicken Nuggets with an inverted pizza strip.

Keep built Tuscan Split Rail Sandwiches on sheet pans and place into the warmer uncovered.

Hold in warmer- keep Tuscan Split Rail Sandwiches at a minimum internal food temperature of 140°F.

Record temperature of product on temperature log sheet.

Serve Tuscan Split Rail Chicken Sandwich with a gloved hand or a spatula. One Tuscan Split Rail Sandwich per serving.
