Thin-sliced oven-roasted turkey breast, tangy cabbage slaw and Swiss cheese on marble rye bread with Dijon mustard and light mayonnaise.

Ingredient Quantity Method

Oven Roasted Turkey Breast Premium, Extra Lean, .75 oz. Slices (#17308-279)

48 slices 

Cover the oven-roasted turkey breast completely and hold in the cooler between 32° and 36°F prior to use.

Tangy Cabbage Slaw (Approximate Yield: 36 oz. 12 each 3 oz. portions)
Shredded coleslaw blend fresh commercially prepared 1-1/2 lbs 
Russian dressing commercially prepared 14 oz 

Tangy Cabbage Slaw

1. Combine the shredded coleslaw blend and the Russian dressing in a bowl and stir to blend. Transfer to another container.  Cover and hold at or below 40°F.

To Assemble
Dark or marble rye bread slices 24 each 
Light mayonnaise 6 oz 
Swiss cheese slices one-half oz each 12 each 
Dijon mustard 6 oz 

To Assemble a Single Serving


1. Place 2 slices of the marble rye bread on a flat work surface; spread 1 tablespoon (1/2 ounce) of the light mayonnaise on 1 slice of the marble rye bread.
2. Top with 4 slices (3 ounces) of the oven-roasted turkey breast, 1 slice of the Swiss cheese, and 3 ounces (1/2 cup) of the tangy coleslaw (see recipe).
3. Spread 1 tablespoon (1/2 ounce) of the Dijon mustard on the top slice of the marble rye bread.  Close the sandwich and slice in half.
