Sanitize work area with bleach & water solution.
Wash hands.
Put on food service gloves.
Place baking paper on sheet pans.
Place Hot & Spicy Whole Grain Chicken Nuggets in a single layer on each sheet pan.
Hold under refrigeration until cooking.
Place Chicken Nuggets into a preheated 350°F convection, 375°F standard oven, and heat nuggets to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.
Sauté the sliced onions and peppers to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.
Heat the cheesy pico in a saucepot over low heat to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet. |

Place the heated Chicken Nuggets into a 4"" hotel pan lined with baking paper. Cover with plastic wrap, leaving 1 corner open to allow moisture to escape until ready to assemble.
Place cooked onions and peppers into a 2"" hotel pan and cover with plastic wrap.
Place cheesy pico in a food safe storage container and cover with plastic wrap. |

To build Spicy Cali-Chicken Club Wrap sprinkle the shredded peper jack cheese on the front half of the Whole Grain Tortilla. Place 2 Chicken Nuggets on one half of the pepper jack cheese, and arrange 3/4-ounce of the sautéed onions and peppers on the other half of the pepper jack cheese. Sprinkle 0.10-ounces of bacon pieces atop the onions and peppers.
Fold the tortilla in half. Then spread 0.20-ounces of the cheesy pico on half of the folded tortilla, then fold in half again, leaving you with a tortilla folded into quarters.
Keep build Spicy Cali-Chicken Club Wraps in 2"" hotel pans and cover with plastic.

Combine tomatoes, white onion, jalapeno, cilantro, lime juice and white pepper in a stainless steel bowl until completely incorporated.
Gently fold in yellow cheese sauce until completely incorporated.
Cover and hold under refrigeration until ready to portion/serve.
