1. Sanitize work area with bleach & water solution.
2. Wash hands.
3. Put on food service gloves.
4. Place the mini burger buns in a single layer onto sheet pans lined with baking paper. Cover tightly with plastic wrap and place into the food warmer.
5. Place the mini burger patties onto sheet pans in a single layer. Do not overlap burgers on each pan as too many will prevent even cooking. Pour ¼-cup of water onto each sheet pan and cover tightly with aluminum foil.
6. Place the mini burger patties into a preheated 350 ° F convection, or a 375 ° F standard oven. Heat the burgers to a minimum internal temperature of 145 ° F , for approximately 12 – 14 minutes. Record temperature on temperature log sheet.
7. Keep the heated mini burger patties covered on the sheet pans and place into the warmer until ready to assemble.
8. Cut the thawed egg patties into 2-inch circles. Arrange the cut egg patties onto sheet pans lined with baking paper.
9. Heat the egg patties according to the manufacturer’s instructions. Arrange the heated egg patties in a hotel pan, cover and place into the warmer until ready to serve.
10. *Hold in warmer – keep mini burger buns, mini burger patties and egg patties at a minimum internal food temperature of 140 ° F.
11. To build Southwest Breakfast Burgers spread the bottom half and top half of the burger bun with ¼-ounce each of cheesy red chile sauce. Place one mini burger pattie atop the bottom half of the bun, and then top that with one egg pattie. Place the top half of the mini burger bun atop the egg pattie.
12. Place the Southwest Breakfast Burgers into a 4” hotel pan lined with baking paper.
13. Keep the warm sandwiches on sheet pans and place into the warmer, loosely covered until ready for service.
14. *Hold in warmer – keep Southwest Breakfast Burgers at a minimum internal food temperature of 140 ° F.
15. * Record temperature of product on temperature log sheet.
16. Serve Southwest Breakfast Burgers with a gloved hand or tongs. Two Burgers per serving. |
