Cover the oven-roasted turkey completely and hold in the cooler between 32° and 36°F prior to use.
Place the bacon on a parchment-lined sheet pan. Heat in a preheated convection oven at 350°F for 10 to 12 minutes or until crisp and the internal temperature reaches 160°F. Transfer to another container. Cover and hold hot above 135°F. |

To Assemble a Single Serving
1. Place 2 slices of the multigrain bread on a flat work surface. Spread 1 tablespoon (1/2 ounce) of the chipotle mayonnaise on 1 slice of the multigrain bread; top with 4 slices (3 ounces) of the oven-roasted turkey, 1 slice of the cheese, 2 slices of the hardwood-smoked bacon, 2 slices of the tomato, and 1 lettuce leaf. 2. Spread 1 tablesppon (1/2 ounce) of the light mayonnaise on the top slice of the multigrain bread. Close the sandwich. |
