Samba Wings with Habanero Citrus Glaze

Golden spicy Fire Stingers® breaded boneless wings for sharing lightly tossed in a fiery sweet-hot Caribbean citrus sauce; served with a side of chili lime crema for indulgent dipping, garnished with fresh cut lime.
Ingredient Quantity Method

Fire Stingers® Flavored Breaded Breast Meat Boneless Chicken Wings, Uncooked (#14908-928)

3 cups 
Reserve frozen boneless wings for assembly of appetizer.
Habanero Citrus Glaze  
Sweet and sour sauce commercially prepared 2 oz 
Orange marmalade 2-1/2 oz 
Orange juice prepared 2 oz 
Habanero pepper sauce commercially prepared 1 tsp 
Combine sweet and sour sauce, orange marmalade, orange juice and habanero sauce in a small nonstick saucepan and whisk to blend. Bring mixture to a boil; reduce heat and simmer for 2 minutes or until reduced to a glaze-like consistency. Hold hot above 140°F.
Chili Lime Crema  
Sour cream 2 oz 
Heavy cream 1/2 oz 
Lime juice fresh 1 tsp 
Habanero pepper sauce commercially prepared 1/2 tsp 
Chili lime seasoning dried 1/4 tsp 
Combine sour cream, heavy cream, lime juice, habanero pepper sauce and chili lime seasoning in a small bowl and whisk to blend. Hold refrigerated at or below 40°F.

To assemble single serving: Deep fry 10 ounces boneless wings at 350°F for 5 to 6 minutes or until internal temperature reaches 165°F for 15 seconds.

Combine 10 ounces wings and 5 ounces habanero citrus glaze in a bowl and toss to evenly coat. Arrange glazed wings on a plate with 2 ounces chili lime crema portioned into an individual ramekin.
Lime wedges fresh 3 each 
Garnish plate with 3 lime wedges.

Chef's tip: For an impressive plate presentation: dip lime wedges in chili lime seasoning.
