Combine sweet and sour sauce, orange marmalade, orange juice and habanero sauce in a small nonstick saucepan and whisk to blend. Bring mixture to a boil; reduce heat and simmer for 2 minutes or until reduced to a glaze-like consistency. Hold hot above 140°F. |

Combine sour cream, heavy cream, lime juice, habanero pepper sauce and chili lime seasoning in a small bowl and whisk to blend. Hold refrigerated at or below 40°F.
To assemble single serving: Deep fry 10 ounces boneless wings at 350°F for 5 to 6 minutes or until internal temperature reaches 165°F for 15 seconds.
Combine 10 ounces wings and 5 ounces habanero citrus glaze in a bowl and toss to evenly coat. Arrange glazed wings on a plate with 2 ounces chili lime crema portioned into an individual ramekin. |
