A platter loaded with three delicious finger foods—original Tiki wings with ginger-teriyaki glaze, char-grilled pork spareribs basted in sesame-hoisin barbecue sauce, and crispy boneless wings served with pineapple salsa—makes a great shareable appetizer.

Ingredient Quantity Method

St. Louis Style Pork Spare Ribs, Fully Cooked (#78980-928)

16 lbs 
Cover tightly and slack in cooler between 32° and 36°F prior to use.
Asian BBQ Sauce  
Hoisin sauce commercially prepared 3 cups 
Ketchup 3 cups 
Soy sauce 3/4 cup 
Rice wine vinegar 6 tbsps 
Sesame oil 2 tbsps 
Combine in bowl and whisk to blend.

Slice thawed ribs into individual pieces; brush generously with Asian BBQ sauce.

Place on sheet pan lined with baking paper. Heat in preheated convection oven at 400°F for 10 to 15 minutes or until internal temperature reaches 140°F for 15 seconds. Keep warm above 140°F.
Tiki Hot Wings  
Apricot preserves commercially prepared 2 cups 
Teriyaki glaze commercially prepared 1-1/2 cups 
Ginger ground refrigerated 1 tbsp 
Sesame oil 1 tbsp 
Sri racha hot sauce 1/2 tbsp 
Combine in saucepan; simmer for 2 to 3 minutes or until fully blended. Reserve.

Unbreaded, Unglazed, Oven Roasted Chicken Wings, 1st Joints, Fully Cooked, Jumbo (#3408-928)

12 lbs 
Place on sheet pan lined with baking paper. Heat in preheated convection oven at 400°F for 20 to 25 minutes or until internal temperature reaches 140°F for 15 seconds.

Toss wings with reserved glaze to evenly coat. Keep warm above 140°F.
Island Pineapple Salsa  
Pineapple chunks thawed diced 2-1/4 lbs 
Red bell pepper fresh minced 3 oz 
Pineapple preserves commercially prepared 3/4 cup 
Lime juice fresh 6 tbsps 
Jalapeño pepper fresh minced 1/4 cup 
Cilantro fresh chopped 1/4 cup 
White sugar 1 tbsp 
Combine in bowl and stir to blend. Cover and chill to hold.

Homestyle Pepper Breaded Breast Meat Boneless Chicken Wings, Uncooked (#4234-928)

3 lbs 
Deep-fry at 350°F for 6 to 8 minutes or until internal temperature reaches 165°F for 15 seconds. Keep warm above 140°F.
Pineapple spears fresh grilled optional 24 each 
To assemble each plate: Place 8 ribs on plate; garnish ribs with 2 pineapple spears if desired. Place 8 glazed wings and 4 ounces boneless wings on plate. Portion 4 ounces salsa in ramekin and arrange on plate.
