Indulge customers in a gourmet pizza without breaking the bank. Italian pizza features a rustic artisan pizza crust layered with garlic Parmesan sauce, olive oil and herb-grilled chicken, Italian sausage, sautéed mushrooms, caramelized onion, and Italian cheese. Bake golden and bubbly and top with crumbled bacon and fresh herbs.

Ingredient Quantity Method

Flavor-Redi® Fajita Breast Strips, 1/2" (#6119-928)

4-1/2 lbs 
Cover tightly and slack in cooler between 32° and 36°F prior to use.

Bonici® 16 oz. Dough Ball (#25338-269)

Place in oiled container. Cover tightly and slack in cooler between 32° and 36°F prior to use.

Allow dough to reach room temperature (65° to 70°F). Roll each into a 12-inch circle.

Place on lightly oiled pan dusted with cornmeal or layer crust on mesh pizza screen. Dock to prevent bubbles; reserve.
Olive oil 3 tbsps 
Tuscan herb seasoning dried 1 tbsp 
Combine in bowl with thawed chicken and toss to blend. Cover and chill below 40°F to hold.
Alfredo sauce commercially prepared 6 cups 
Yellow onions fresh julienne cut caramelized 18 oz 
Sliced mushrooms fresh sautéed 18 oz 
Parsley fresh minced 1 oz 
Thyme leaves fresh 1 tbsp 
Fontina cheese blend shredded 3 lbs 

Bonici® Italian Sausage, 14/oz. (#1562-269)

1-1/2 lbs 

Tyson® Bacon Pieces, 3/8" (#45350-928)

To assemble each pizza: Spread 4 ounces sauce evenly over crust. Top with 1½ ounces onions, 1½ ounces mushrooms, ½ teaspoon parsley, ¼ teaspoon thyme, 2 ounces cheese, 6 ounces seasoned chicken strips, 2 ounces sausage, 2 ounces additional cheese, and 1 ounce bacon.

Bake uncovered in preheated conventional oven at 500°F for 15 to 18 minutes or until golden and bubbly.

Remove from oven and slice into wedges.
