A spicy ranch dipping sauce with tomatoes, white onion, jalapeno, cilantro, lime juice and white pepper that pairs well with our Side Car Dippin Chicken Sliders.

Ingredient Quantity Method
Pico Ranch  
Globe Tomato 1 4 dice 34 oz 
White Onion 1 4 dice 3-1/2 oz 
Jalapeno seeded minced 3-1/2 oz 
Cilantro stems removed chopped  
Lime juice fresh squeezed 4 tbsps 
White Pepper pinch 
Ranch dressing commercially prepared 30 oz 
Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Prepare all vegetables.

Combine tomatoes, white onion, jalapeno, cilantro, lime juice and white pepper in a stainless steel bowl.
Fold in ranch dressing until completely incorporated.

Cover and hold under refrigeration until ready to portion/serve.
Record temperature of product on temperature log sheet. Portion 1.5-ounces into 2-ounce portion cups.
