Italian Family Salad

A big salad—enough for two to four people—featuring crisp romaine lettuce, spicy pepperoni slices, olives, red onion, Italian peppers, marinated artichoke hearts, grated Parmesan cheese, and Italian croutons, tossed in red wine vinaigrette. Serve with garlic Parmesan bread sticks.

Ingredient Quantity Method

Bonici® Thin Sliced Pepperoni, 16/oz., 45 mm (#115040-269)

Cover tightly and slack in cooler between 32° and 36°F prior to use.
Garlic Parmesan Bread Sticks  

Bonici® 16 oz. Dough Ball (#25338-269)

Butter flavored oil as needed 
Garlic and pepper seasoning dried as needed 
Parmesan cheese grated as needed 
Place in oiled containers. Cover tightly and slack overnight in cooler between 32° and 36° prior to use.

Allow dough to reach room temperature (65° to 70°F). Form each dough ball into a 12-inch x 5-inch oblong shape; slice into 12 strips. Twist each strip and place on sheet pan lined with baking paper. Bake in preheated conventional oven at 400°F for 12 to 15 minutes or until light golden.

Brush each bread stick with oil; sprinkle with seasoning and Parmesan cheese. Keep warm.
Romaine lettuce fresh chopped 4-1/2 lbs 
Artichoke heart quarters marinated drained 1-1/2 lbs 
Roasted red pepper drained diced 12 oz 
Red onion fresh slivered 12 oz 
Kalamata olives pitted drained 12 oz 
Pepperoncini peppers sliced drained 12 oz 
Croutons commercially prepared 12 oz 
Parmesan cheese grated 6 oz 
To assemble each salad: Combine 6 ounces lettuce, 2 ounces artichoke hearts, 1 ounce each pepperoni, roasted pepper, red onions, olives, peppers, and croutons in bowl. Add 2 tablespoons Parmesan cheese and toss to evenly blend.
Olive oil and vinegar salad dressing commercially prepared 1-1/2 cups 
Add 2 tablespoons dressing and toss to evenly coat lettuce.

Serve with 6 warm breadsticks.
