Grilled 'n Chilled Chicken Wok Box

Tyson® Teriyaki Mega Minis™ Glazed Chicken Bites layered over a chilled lo-mein noodle salad with crisp, grilled 'n chilled veggies and a flavorful Asian sesame dressing.
Ingredient Quantity Method
Lo mein noodles cooked and chilled 12-1/2 lbs 
Asian sesame dressing commercially prepared 15 oz 
Red bell pepper cut into a 1 dice 17-1/2 oz 
Green bell pepper cut into a 1 dice 17-1/2 oz 
White onion cut into a 1 dice 25 oz 
Zucchini squash cut into a 1 dice 37-1/2 oz 
Yellow squash cut into a 1 dice 37-1/2 oz 

Teriyaki Mega Minis™ Glazed Chicken Bites, Unbreaded, Dark Meat, Fully Cooked, w/ISP (#13018-328)

Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Place baking paper on sheet pans.

Place Mega Minis Chicken Bites in a single layer on sheet pans.

Hold under refigeration until cooking.

Place Mega Minis Chicken Bites into a preheated 350° convection, 375°F standard oven and heat to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.

Place the heated Mega Minis Chicken Bites into a 4"" hotel pan lined with baking paper. Cover with plastic wrap until ready to assemble.

Hold in warmer- keep Mega Minis Chicken Bites and sauteed onions and peppers at a minimum internal food temperature of 140°F.

Lightly toss the cooked lo mein noodles with the Asian sesame dressing. Hold in refigerator- keep at a maximum internal food temperature of 40°F.

Wash vegetables

Cut the vegetables into 1/2"" thick planks, lightly toss them with olive oil, salt and pepper and grill until vegetables are al dente. Cool down in the refrigerator or a blast chiller to a maximum internal food temperature of 40°F.

Once vegetables are cool cut into a 1""x1&1/2"" dice and hold in refrigerator- keep at a maximum internal food temperature of 40°F.
To build chicken wok box arrange 4 ounces of dressed lo mein noodles in the bottom of a Chinese to-go box. Top with 0.35 ounces of grilled red and green bell peppers, 0.5 ounces of grilled white onion and 0.5 ounces of grilled zucchini and yellow squash.

Close filled boxes and hold in refrigerator- keep at a minimum internal food temperature of 40°F.
Record temperature of products on temperature log sheet.

As you serve each box open the top and place two warm Mega Minis Chicken Bites atop the grilled vegetables.

Serve Chicken Wok Box with a gloved hand. One wok box per serving.
