Crispy Chipotle Ranch Chicken Club Tacos

Two grilled soft tacos stuffed with breaded chicken tenders, bacon, lettuce, tomatoes, and chipotle ranch dressing. Served with a fire-roasted salsa vinaigrette salad.

Ingredient Quantity Method

Homestyle Breaded Value Chicken Breast Tender, Uncooked (#14049-928)

48 pieces 
Deep-fry chicken tenders, from frozen, at 350°F for 2½ to 3 minutes or until internal temperature reaches 165°F for 15 seconds. Hold hot above 135°F.
Chipotle Chile Ranch Dressing  
Ranch dressing commercially prepared 3/4 cup 
Mayonnaise 3/4 cup 
Heavy cream 1-1/2 cups 
Chipotle chile in adobo sauce canned pureed 1/4 cup 
Chile lime seasoning dried 1 tbsp 
Combine ranch dressing, mayonnaise, heavy cream, Chipotle chile, and chile lime seasoning in bowl and whisk to blend. Cover and hold refrigerated at or below 40°F.

Mexican Original® Heat-pressed White Flour Tortillas, 6.25 inch, 12.5 oz. per dozen (#7701-621)

Green leaf lettuce fresh shredded 12 oz 

Tyson® Bacon Pieces, 3/4" (#45355-928)

Tomatoes fresh diced 9 oz 
To assemble single serving: Place 2 tortillas on flat work surface. Fill each with ½ ounce lettuce, 2 chicken tenders, and 1 tablespoon bacon, dressing, and tomatoes. Fold closed; arrange on plate. Portion 2 tablespoons dressing in ramekin and arrange on plate.

Fire Roasted Salsa Vinaigrette  
Fire roasted tomato salsa commercially prepared 1-1/4 cups 
Corn oil 6 tbsps 
Combine salsa and corn oil in bowl and whisk to blend. Cover and hold refrigerated at or below 40°F.
Salad  
Green leaf lettuce fresh chopped 12 oz 
Pepper Jack cheese shredded 6 oz 

Mexican Original® Baked Corn Tortilla Strips, Red, White, and Blue, 1/4 inch, cut, 8.2 oz. per dozen (#7634-621)

6 oz 
Combine 1 ounce lettuce, ½ ounce cheese, ½ ounce tortilla strips, and 2 tablespoons vinaigrette in a bowl and toss to blend.

Portion on plate.
Lime fresh wedges 12  
Garnish with 1 lime wedge.
