Family-style Italian entrée featuring six breaded chicken filets over capellini pasta in Romano cream sauce topped with artichokes, tomatoes, and garlic. Served with a side of Italian bread.

Ingredient Quantity Method

Homestyle Breaded Right Size™ Chicken Breast Filets, Fully Cooked (#13355-928)

6 pieces 
Deep fry filets from frozen at 350°F for 3-½ to 4 minutes or until internal temperature reaches 140°F for 15 seconds. Hold hot above 135°F.
Olive oil 1 tbsp 
Garlic fresh minced 1 tsp 
Artichoke hearts quartered drained 4 oz 
Lemon and pepper seasoning blend dried 1/2 tsp 
Alfredo sauce commercially prepared thin warm 1 cup 
Chicken broth canned 1/4 cup 
Romano cheese grated 1 tbsp 
Tomatoes fresh seeded diced 2 oz 
Parsley fresh chopped 1 tbsp 
Capellini pasta cooked al dente drained 12 oz 
Combine olive oil, garlic, artichoke hearts, and lemon pepper in nonstick sauté pan and sauté over low heat for 2 to 3 minutes stirring often until garlic is tender and moisture has evaporated.
Romano cheese grated 1 tbsp 
Add Alfredo sauce, chicken broth, and romano cheese to pan and stir to blend. Simmer over medium-low heat for 3 to 4 minutes or until thoroughly heated, stirring often.
Add tomatoes and parsley to pan and stir to blend. Simmer over medium low heat for 1 to 2 minutes stirring often until thoroughly heated.
To assemble family style serving: Place 12 ounces pasta on platter; top with 1-½ cups sauce. Arrange 6 chicken filets over pasta; top with ½ cup sauce.
Garnish with 1 tablespoon grated cheese.

Serve accompanied with a basket of Italian bread, if desired.
