Chicken Parm Breadsticker

Remember, big flavor in a snack-sized offering is a great way to expand value, and this is a great example featuring one breaded breast strip topped with marinara sauce and melted mozzarella cheese tucked into a warm garlic-Parmesan breadstick.

Ingredient Quantity Method

Bonici® 16 oz. Dough Ball (#25338-269)

Place in deep oiled container. Cover tightly and slack overnight in cooler between 32° and 36°F prior to use.

Allow dough to reach room temperature (65° to 70°F). Stretch dough into a 12-inch x 6-inch rectangle, trimming edges if necessary. Using a pizza cutter, slice dough into twelve 3-inch x 2-inch breadsticks.
Cornmeal as needed 
Arrange breadsticks on oiled baking sheet dusted lightly with cornmeal.
Butter flavored oil as needed 
Garlic and parsley seasoning dry as needed 
Parmesan cheese grated as needed 
Brush each breadstick lightly with oil; sprinkle each lightly with garlic seasoning and cheese.

Bake uncovered in preheated conventional oven at 400°F for 15 minutes or until golden. Remove from oven; cool. Slice each breadstick horizontally for sandwiches; cover to hold.

Deep-fry at 350°F for 3 to 5 minutes or until internal temperature reaches 140°F for 15 seconds. Remove from fryer and drain. Keep warm above 140°F.
Marinara sauce prepared warm 3/4 cup 
Mozzarella cheese slices One-Fourth oz each 12 bags 
To assemble single serving: Place 1 breadstick on flat work surface. Layer 1 chicken fritter on bottom half of breadstick; top with 1 tablespoon marinara sauce and 1 slice cheese. Close with top half of breadstick.
