Chicken Mignon

Filet mignon on a chicken budget; steakhouse-inspired entrée features a marinated chicken breast filet wrapped in smoky-sweet bacon crusted with coarse-cracked California garlic and black pepper seasoning. Serve the bacon-wrapped filet pan-seared succulent, juicy, and sizzling-hot topped with a coin of melting bleu cheese compound butter. Plate with roasted new potatoes and a vegetable side dish such as garlic-sautéed green beans seasoned with bits of rich fire-roasted tomatoes.

Ingredient Quantity Method

Tyson® Individually Frozen Boneless, Skinless Chicken Breast Filets, Up to 15% Marination, 6 oz., Uncooked (#4606-928)

Cover tightly and slack in cooler between 32° and 36°F prior to use.

Tyson® Applewood Smoked Bacon, Flat-Pack®, 18 to 22 slices per lb., Uncooked (#209150-928)

Cover tightly and slack in cooler between 32° and 36°F prior to use.

Wrap 1 slice of bacon around outer edge of each chicken breast filet and secure with toothpick. Cover and chill below 40°F to hold.
Bleu Cheese Compound Butter  
Butter unsalted softened 2 oz 
Bleu cheese crumbled softened 2 oz 
Italian parsley fresh minced 1/2 tbsp 
Kosher salt 1/4 tsp 
Black pepper coarse ground 1/8 tsp 
Combine in bowl and blend with rubber spatula. Spoon onto parchment paper and roll closed. Twist outer edges of parchment paper tight to form a cylindrical-shaped log. Cover and chill for at least 2 hours; slice into 12 pieces. Cover and chill to hold.
Butter flavored oil as needed 
To prepare bacon-wrapped filets: Heat oil in skillet. Working in several smaller batches, add filets, bottom side down, and sauté over medium heat for 3 to 4 minutes or until golden; turn and sauté top sides of chicken.
Montreal steak seasoning blend dried as needed 
Transfer browned filets, top side up, to sheet pan lined with baking paper. Season generously with steak seasoning.

Heat uncovered in preheated conventional oven at 350°F for 20 minutes or until internal temperature reaches 165°F for 15 seconds. Remove from oven. Keep warm above 140°F.
Green Beans with Fire Roasted Tomatoes  
Butter 2 tbsps 
Garlic fresh minced 1/2 tbsp 
Fire roasted tomatoes diced drained 1 cup 
Green beans trimmed blanched 1 lb 
Sauté garlic in butter over low heat for 1 minute; add tomatoes and sauté for 2 to 3 minutes. Add green beans and sauté for 5 minutes or until fully heated. Keep warm.
New potatoes roasted warm 2-1/4 lbs 
Parsley sprigs fresh 12  
To assemble single serving: Place 1 bacon-wrapped breast filet on plate; top with 1 bleu cheese butter pat. Portion 2 ounces green beans and 3 ounces potatoes on plate. Garnish plate with 1 sprig parsley.
