Chicken Focaccia Sandwich

A Tyson® Right 1™ Chicken Pattie layered between herb seasoned focaccia flats with zesty roasted red pepper marinara, fresh sliced tomato and melted Mozzarella cheese.
Ingredient Quantity Method

Bonici® 12" x 16" Sheeted Dough (#25360-269)

100 strips 
Italian herb seasoning 25 tsps 
Roasted red pepper marinara sauce see recipe 50 oz 
Mozzarella Cheese part skim shredded 50 oz 

Right 1™ Breast Meat Chicken Patties, Unbreaded, Fully Cooked (#15476-328)

70 oz 
Roma tomatoes sliced 1 4 thick 150 each 
Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Place baking paper on sheet pans.

Place Right 1 Chicken Patties in a single layer on sheet pans. Do not overlap patties on each pan as too many will prevent event even cooking.

Place the 4.5""x2.5"" pizza strips onto sheet pans being sure that they are spaced 1/2"" apart from each other

On half the pizza strips spray the tops with a thin layer of non-stick cooking spray, then sprinkle 1/4-teaspoon of Italian herb seasoning on each sprayed pizza strip.

On the remaining pizza strip halves spread 0.5 ounces of roasted red pepper marinara on each strip, then top with 0.25 ounces of mozzarella chees on each strip.

Hold under refigeration until cooking.

Place chicken patties into a preheated 350° convection, 375°F conventional oven and heat patties to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet.

Place pizza strips into a preheated 350°F convection, 375°F conventional oven and bake until golden brown and to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet.
Slice chicken patties on the bias 1/4" thick. Place chicken slices in a 2" hotel pan and cover with plastic until ready to assemble.
Keep pizza strips on sheet pans and place into the warmer uncovered until ready to assemble.

Hold in warmer- keep chicken pattie slices and pizza strips at a minimum internal food temperature of 140°F.
To build Chicken Pizzano place 1.4 ounces of sliced chicken patties on top of the pizza strip with sauce and cheese, then top the chicken with 3 slices of roma tomatoe. Sprinkle 0.25 ounces of shredded mozzarella cheese atop the tomato slices and then place the pizza strip with Italian seasoning on top.

Keep built Chicken Pizzanos on sheet pans ans place into the warmer uncovered until ready to serve.

Hold in warmer-keep Chicken Pizzanos at a minimum internal food temperature of 140°F.

Record temperature of product on temperature log sheet.

Serve Chicken Pizzanos with a gloved hand or a spatula. One pizzano per serving.
