Chicken Cordon Bleu Toaster Wrap

A warm flour tortilla stuffed with Tyson® All Natural White Meat Chicken Nuggets, scrambled eggs, melted Swiss cheese and diced ham. Wrapped up for maximum portability and can be served with your choice of dipping sauce.
Ingredient Quantity Method

Mexican Original® Heat-pressed White Flour Tortillas, 6.5 inch, 14 oz. per dozen (#7703-621)

100 each 

All Natural White Meat Chicken Chunks, Breaded, White Meat, Fully Cooked (#15489-328)

100 each 
Scrabled Liquid Eggs Thawed 50 oz 
Bonici Sliced and Quartered Ham 25 oz 
Swiss Cheese sliced cut into 1 x1 squares 200 each 
Salsa commercially prepared 50  
Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Place baking paper on sheet pans.

Place All Natural Chicken Nuggets in a single layer on each sheet pan.

Hold under refrigeration until cooking.

Place All Natural Chicken Nuggets into a preheated 350°F convection, 375°F standard oven and heat nuggets to a minimum of 145°F, approximatley 10-12 minutes. Record temperature on temperature log sheet.
Possible Condiments  
Honey mustard dipping sauce commercially prepared 1 5 oz per pc cup 75 oz 
Cook the eggs in a nonstick saute pan over medium heat to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.
Place the heated All Natural Nuggets into a 4" hotel pan lined with baking paper. Cover with plastic wrap, leaving 1 corner open to allow moisture to escape until ready to assemble.

Place scrambled eggs into a 2" hotel pan and cover with plastic wrap until ready to assemble.

Hold in warmer- keep All Natural Nuggets and scrambled eggs at a minimum internal food temperature of 140°F.
To build Chicken Toaster Wrap place one slice of Swiss cheese in the chenter of the flour tortilla, top with 1/2-ounce scrambled eggs, then top that with 1/4-ounce Bonici ham. Top the ham with one All Natural Nugget and one more slice of Swiss cheese.

Fold the built tortilla as shown into a toaster wrap (should resemble a hockey puck.)

Place Chicken Toaster Wraps on sheet pans lined with baking paper and toast in a preheated 350°F convection, 375°F conventional oven. Bake Toaster Wraps to a minimum of 145°F, approximately 3-4 minutes. Record temperature on temperature log sheet.

Keep heated Toaster Wraps on the sheet pans and place into the warmer uncovered until ready to serve.

Hold in warmer- keep Toaster Wraps at a minimum internal food temperature of 140°F.

Record temperature of product on temperature log sheet.

Serve Toaster Wraps with a gloved hand or tongs. Two Toaster Wraps per serving.
