Cabo Adobo Pizza

Offer the big, bold flavor of chipotle-grilled chicken on an affordable individual-sized signature pizza. Rustic grilled flatbread pizza layered with smoky-hot-and-spicy rich chipotle cream, grilled chicken strips, and vibrant tricolor fire-roasted bell peppers and onions. Crisp crumbled bacon and Cheddar-Jack cheese finish this baked bubbly-hot and delicious pizza topped with zesty cumin lime crema.

Ingredient Quantity Method

Fajita Flavored Chicken Strips, Fully Cooked (#2497-398)

2-1/4 lbs 
Cover tightly and slack in cooler between 32º and 36º F prior to use.
Barbecue seasoning blend dried 1 tbsp 
Combine thawed chicken with seasoning and toss to blend. Cover and chill below 40°F to hold.
Chipotle Cream Sauce  
Alfredo sauce commercially prepared warm 1-1/2 cups 
Chipotle seasoning dried 1-1/2 tbsps 
Combine in saucepot and whisk to blend; keep warm.
Cumin Lime Crema  
Sour cream 1 cup 
Ranch dressing commercially prepared 1/2 cup 
Lime juice fresh 3 tbsps 
Cumin ground 2 tsps 
Kosher salt 1/4 tsp 
Combine in bowl and whisk to blend. Portion in squeeze bottle, if desired; cover and chill to hold.

Mexican Original® Suprema Flatbreads, 7 inch (#7901-621)

12 each 
Cheddar Jack cheese shredded 18 oz 
Fire roasted seasoned peppers and onions thawed 12 oz 

Tyson® Bacon Pieces, 3/4" (#45355-928)

6 oz 
Lime wedges fresh dipped in chipotle seasoning 24  
Cilantro sprigs fresh 12  
To assemble single serving: Place 1 flatbread on flat work surface. Spread 1 tablespoon chipotle sauce evenly over flatbread; top with 1 ounce shredded cheese, 3 ounces seasoned chicken strips, and 1 ounce peppers and onions. Drizzle 1 tablespoon additional chipotle sauce over pizza and top with ½ ounce each shredded cheese and bacon.

Bake in preheated conventional oven at 450°F for 8 to 10 minutes or until golden and bubbly.

Remove flatbread from oven; slice in quarters and arrange on plate. Drizzle 2 tablespoons crema over flatbread. Garnish plate with 2 lime wedges and a sprig of cilantro.
