Sanitize work area with bleach & water solution.
Wash hands.
Put on food service gloves.
Place baking paper on sheet pans.
Place burgers onto sheet pans in a single layer. Do not overlap burgers on each pan as too many will prevent even cooking.
Hold under refrigeration until cooking.
Place burgers into a preheated 350°F convection oven, 375°F standard oven, and heat burgers to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet. |

Cook the liquid eggs in a nonstick sauté pan to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.

Cut the heated burgers in half and place into a 4"" hotel pan lined with baking paper. Cover with plastic wrap.
Place scrambled eggs into a 2"" hotel pan and cover with plastic wrap.
Place cooked onions and peppers into a 2"" hotel pan and cover with plastic wrap.
Hold in warmer--keep burgers, scrambled eggs and sautéed onions and peppers at a minimum internal food temperature of 140°F. |

To build Breakfast Burger Wrap arrange 0.10 ounces of the cheese blend in the middle of the whole grain tortilla. Top the cheese with 0.65 ounces of scrambled eggs, then top that with one burger half. Top the burger half with 1/2-ounce of sautéed onions and peppers and then top that with the remaining 0.10 ounces cheese blend.
Fold the built tortilla into a wrap (a burrito shape with one end open and one end closed).
Wrap each wrap in deli paper and place into 2"" hotel pans.
Hold in warmer- keep Breakfast Burger Wraps at a minimum internal food temperature of 140°F.
Record temperature of product on temperature log sheet.
Serve Breakfast Burger Wrap with a gloved hand or tongs. One Breakfast Burger Wrap per serving. |
