Breakfast Burger Quesadilla

A warm Mexican Original Flour Tortilla overstuffed with Tyson Premium Onion Flavored Charbroiled Beef Burger, fluffy scrambled eggs, shredded Mexican cheese and sautéed bell peppers & onions, toasted to hot and bubbly perfection. Accompany with a side of salsa or red chile sour cream.

Ingredient Quantity Method

Mexican Original® Heat-pressed White Flour Tortillas, 6.5 inch, 14 oz. per dozen (#7703-621)

50 each 

Onion Flavored Premium Charbroiled Beef Burgers, Fully Cooked, 3 oz. (#16160-328)

50 each 
Liquid eggs frozen scrambled 37-1/2 oz 
White onion sliced 1 4 thick 18-3/4 oz 
Green bell pepper sliced 1 4 thick 18-3/4 oz 
Mexican cheese blend reduced fat shredded 25 oz 
Sanitize work area with bleach & water solution.

Wash hands.

Put on food service gloves.

Place baking paper on sheet pans.

Place burgers onto sheet pans in a single layer. Do not overlap burgers on each pan as too many will prevent even cooking.

Hold under refrigeration until cooking.

Place burger patties into a preheated 350°F convection oven, 375°F conventional oven, and heat burgers to a minimum of 145°F, approximately 12-14 minutes. Record temperature on temperature log sheet.
Possible Condiments  
Red Chile Sour Cream Dipping Sauce see recipe 1 5 oz per pc cup 75 oz 
OR  
Salsa commercially prepared 1 5 oz per pc cup 75 oz 
Cook the liquid eggs in a nonstick sauté pan to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.

Sauté the sliced onions and peppers to a minimum of 145°F, approximately 8-10 minutes. Record temperature on temperature log sheet.
Cut the heated burgers in half and place into a 4"" hotel pan lined with baking paper. Cover with plastic wrap.

Place scrambled eggs into a 2"" hotel pan and cover with plastic wrap.

Place cooked onions and peppers into a 2"" hotel pan and cover with plastic wrap.

Hold in warmer--keep burgers, scrambled eggs and sautéed onions and peppers at a minimum internal food temperature of 140°F.
To build the Breakfast Burger Quesadilla arrange 1/4 ounce of the cheese blend on the front half of the flour tortilla. Top the cheese with 3/4 ounce of scrambled eggs, then top that with the two burger halves. Top the burger halves with 3/4 ounce of sautéed onions and peppers and then top that with the remaining 1/4 ounce cheese blend.

Fold the built tortilla in half, place on sheet pans lined with baking paper and toast in a preheated 350°F convection oven, 375°F standard oven, for approximately 3-4 minutes. Record temperature on temperature log sheet.

Keep heated quesadillas on the sheet pans and place into the warmer uncovered.

Hold in warmer- keep Breakfast Burger Quesadillas at a minimum internal food temperature of 140°F.

Record temperature of product on temperature log sheet.

Serve Breakfast Burger Quesadilla with a gloved hand or tongs. One Breakfast Burger Quesadilla per serving.
