Black & Bleu Burger

Customers can live large on the burger menu! Steakhouse-style grilled burger features a succulent charbroiled burger seasoned with Montreal seasoning served sizzling hot, topped with smoky-sweet bacon and crumbled bits of melting Roquefort cheese, on a toasted ciabatta roll. Plate with a side of bleu cheese aïoli, crisp lettuce, ripe tomato, and fresh-cut Vidalia onions. Serve with a generous portion of extra-thin, extra-crispy shoestring french fries.

Ingredient Quantity Method

Charbroiled Beef Burgers, 4 oz., Fully Cooked (#12345-928)

Place on sheet pan lined with baking paper and heat in preheated conventional oven at 350°F for 7 to 10 minutes or until internal temperature reaches 140°F for 15 seconds. Keep warm above 140º F.
Bleu Cheese Aioli  
Bleu cheese dressing commercially prepared 2-1/4 cups 
Mayonnaise 3/4 cup 
Garlic and pepper seasoning dried 1-1/2 tsps 
Combine in bowl and whisk to blend. Cover and chill to hold.
Ciabatta rolls split for sandwiches toasted 12  

Tyson® Natural Hardwood Smoked Bacon, 8 slices per inch, Uncooked (#7098-928)

12 strips 
Roquefort cheese crumbled 4 oz 
Green leaf lettuce leaves fresh 12 bags 
Tomato slices fresh 12 bags 
Vidalia onion slices fresh 12 bags 
Shoestring fries deep fried warm 2-1/4 lbs 
To assemble single serving: Place 1 roll on flat work surface toasted sides up; spread 1 tablespoon aioli on each side. Layer bottom half of roll with 1 burger, 1 strip of bacon, and 1 tablespoon crumbled cheese. Close with top half of roll and arrange on plate with 1 lettuce leaf, 1 tomato slice, and 1 onion slice. Portion 2 tablespoons aioli in ramekin and arrange on plate with 3 ounces fries portioned in paper-lined cup.
