Bacon Queso

A bacon and cheese dipping sauce that pairs well with our Side Car Dippin Burger Sliders.

Ingredient Quantity Method
Bacon Queso  
Yellow Queso commercially prepared 46 oz 

Tyson® Bacon Pieces, 3/8" (#45350-928)

29 oz 
Sanitize work area with bleach and water solution

Wash hands.

Put on food service gloves.

Place baking paper on sheet pan.

Place appropriate amount of fully cooked bacon pieces onto each sheet pan.

Cover and hold under refrigeration until cooking.
Place bacon pieces into a preheated 350°F convection, 375° standard oven and heat bacon pieces to a minimum of 145°F, approximately 5-7 minutes.

Record temperature on temperature log sheet.
Heat queso mixture in the sauce pot to a minimum of 145°F for 15 seconds.

Record temperature on temperature log sheet.

Combine cheese sauce and bacon pieces in the sauce pot until completely incorporated.

Place heated bacon queso in an appropriate pan and cover with plastic wrap.

Hold in warmer or steam well - keep bacon queso at a minimum internal food temperature of 140°F.
Record temperature of product on temperature log sheet. Serve bacon queso with a ladle. One and a half ounces per serving.
