Cover the hickory smoked turkey completely and hold in the cooler between 32° and 36°F prior to use. Place the bacon on a parchment lined sheet pan. Heat in a preheated convection oven at 350°F for 10 to 12 minutes or until crisp and the internal temperature reaches 160°F. Transfer to another container. Cover and hold hot above 135°F. |

Barbecue Mayonnaise
1. Combine the mayonnaise and the barbecue sauce in a bowl and whisk to blend. Transfer to another container. Cover and hold at or below 40°F. |

To Assemble a Single Serving
1. Spray the outer surfaces of the French roll lightly with the cooking oil. Place the French roll, cut sides up, on a flat work surface. 2. Spread 1 tablespoon (1/2 ounce) of the barbecue mayonnaise (see recipe) on the bottom side of the French roll. Top with 3 slices (2 1/4 ounces) of teh hickory-smoked turkey breast, 2 slices of the hardwood-smoked bacon, and 1 slice of the Cheddar cheese. Close with the top side of the French roll. 3. Grill press the panini sandwich on a preheated panini grill set on medium-high heat for 2 to 2 1/2 minutes or until the cheese is melted and the bread is golden brown. |
